Walnut Blondie Recipe
This didn't last long at all in our household! The key to its indulgent flavour? Brown sugar. Its deep caramel notes bring a beautiful warmth to every bite, perfectly complementing the nutty crunch of roasted walnuts. The pairing is irresistible – a buttery, caramel sweetness with the toasty walnuts.
This recipe makes it easy to create a tray of homemade goodness. Whether you’re enjoying them with a cup of tea or as a post-dinner treat, these walnut blondies are a celebration of simple ingredients done right.
See, before the iconic chocolate brownie became popular, there were slices sweetened with molasses or brown sugar, which laid the foundation for what we now call blondies. Over time, the blondie has evolved to include variations of different key ingredients (see below for inspiration), and despite being overshadowed by its more famous chocolate counterpart, the blondie has remained a beloved dessert for its simplicity and rich, buttery sweetness.
Not a fan of walnuts? No worries. There are plenty of delicious alternatives. Substitute any other nuts you have in your cupboard, or for a touch of sweetness, try adding white chocolate chips – a classic! Shoot, you can even sprinkle a bit of sea salt on top to create a lovely sweet-salty balance.

Ingredients:
- 1/2 cup (113g) melted butter
- 1 cup (200g) dark brown sugar (packed)
- 1 large egg (lightly beaten)
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/8 tsp baking soda
- Pinch of salt
- 1 cup (125g) all-purpose flour
- 1/3 cup (60g) walnuts
Method:
- Preheat oven to 175°C or 160°C fan bake and butter an 8x8-inch pan.
- Mix butter and sugar, then whisk in egg and vanilla.
- Add dry ingredients and stir in nuts.
- Bake in the middle of the oven for around 30mins. If a skewer comes out clean in the middle, you're done. Cool completely before serving.
