Today we’re sharing something sweet for valentine's day - a delicious recipe courtesy of our friend Eleanor Cripps. If chocolate is your love language, then you will adore this incredibly easy olive oil and maple chocolate cake. It’s flourless, naturally sweetened, plus it only takes 5 minutes to whip up!
1/2 cup cocoa
1/2 cup olive oil
1/2 cup brewed coffee or hot water
3 free range eggs
1/2 cup maple or date syrup
1 1/2 cups almond meal
1 tsp baking soda
1/2 tsp sea salt
Preheat the oven to 170 °C, and grease a circular cake tin.
In a food processor, add all ingredients, and process until smooth. Tip the mixture into the prepared cake tin and smooth out evenly.
Bake for 20-25 minutes, or until a skewer inserted into the middle of the cake comes out clean.
Allow to cool in the tin entirely before carefully turning out onto a serving plate.
Dust with icing sugar to serve, and top with fresh berries if you like.
